The Recipe – Quinoa and Kale Patties
Ingredients
- 1 cup quinoa
- 2 cups water
- 4 eggs, whisked
- 1/3 cup parmesean
- 3 green onions, sliced thin
- 3 cloves garlic, minced
- 1 cup steamed kale
- 1 cup breadcrumbs
- 1 tsp olive oil
- 1/2 tsp sea salt
Directions
Cook quinoa and let cool to room temp. In a bowl, mix together quinoa, eggs, parm, onions, garlic, salt, kale and breadcrumbs. Let sit to absorb liquids. Form patties and heat olive oil in a skillet over medium-low heat. Place patties in the pan and let cook for 7-10 minutes, covered, until they are nicely brown. Flip and cook the other side for 7-10 minutes. Top with avocado, salsa, sour cream, lemon juice or flavored oils.
