Your week five CSA basket has arrived, and with it comes new possibilities for healthy meals with your farm fresh produce! As always, we love being able to help you be adventurous in the kitchen. Here is a delicious and simple recipe that uses the kale and onions you picked up from BeeWench Farm!

The Recipe – Quinoa and Kale Patties

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 4 eggs, whisked
  • 1/3 cup parmesean
  • 3 green onions, sliced thin
  • 3 cloves garlic, minced
  • 1 cup steamed kale
  • 1 cup breadcrumbs
  • 1 tsp olive oil
  • 1/2 tsp sea salt

Directions
Cook quinoa and let cool to room temp. In a bowl, mix together quinoa, eggs, parm, onions, garlic, salt, kale and breadcrumbs. Let sit to absorb liquids. Form patties and heat olive oil in a skillet over medium-low heat. Place patties in the pan and let cook for 7-10 minutes, covered, until they are nicely brown. Flip and cook the other side for 7-10 minutes. Top with avocado, salsa, sour cream, lemon juice or flavored oils.
