Lemon Chicken Pasta
Super tasty, crowd pleasing recipe that you can make quickly!
Ingredients
- 2 cups cooked and shredded or cut up chicken usually from a whole roasted chicken, but you can cook and cut up some breasts to go in this
- ·16 oz pasta we always use the bowtie pasta, but any shape will work
- 2 lemons or more depending on your affinity for lemons
- 1/3 cup of olive oil
- ·Salt and pepper
- ½ cup parmesan cheese

Cook the pasta to your liking

In a bowl, combine the zest from 1 or 2 lemons (based on preference), juice from 2 lemons, 1/3 cup olive oil, salt, and pepper to taste.

Once your pasta is cooked, drain it, and put it in a large bowl. Mix in the sauce from the other bowl, cooked chicken, and parmesan cheese.

Enjoy as is, or add extra lemon or cheese! A sprinkle of parsley is a great addition as well.
Recipe Notes
This recipe is very kid friendly, but you can kick it up a notch with some sautéed garlic and veggies added in. This is also excellent with zoodles! It also seems to be a great crowd pleasing dish, so keep this recipe around for an easy go-to dish if you need something fast and easy.
