It’s the last week of our Summer CSA shares! It’s been a pleasure to share our farm-fresh produce with you every week, and we are excited to continue doing just that in the fall. The Recipe: Watermelon-Peach Salsa
- 1/2 cup hot pepper jelly
- 1 tbsp lime zest
- 1/4 cup lime juice
- 2 cups diced watermelon
- 1 cup peeled, diced peaches
- 1/3 cup chopped basil
- 1/3 cup chopped green onions
- 3 cups tomatoes, chopped
- Salt and pepper
Whisk together pepper jelly, lime zest and lime juice in a bowl. Stir in watermelon, peaches and basil. Toss tomatoes with salt and add a large spoonful to cocktail glasses. Top with salsa. Serve cold.
