
We are excited to deliver yet another delicious recipe this week along with your new CSA weekly share! This recipe offers a delicious twist on something we all love. By adding some herbs and parmesan cheese to baked squash, you can create a fun, different side dish full of fresh flavor!
The Recipe – Baked Parmesan Squash
Ingredients
- 4 squash or zucchini – quartered lengthwise
- 1/2 cup grated parmesan
- 1/2 tsp thyme (minced)
- 1/2 tsp oregano (minced)
- 1/2 tsp basil (minced)
- 1/4 tsp garlic powder
- salt and pepper to taste
- 2 tbsp olive oil
- 2 tbsp parsley
Directions
Preheat oven to 350 degrees. grease a baking sheet and set aside. Combine thyme, oregano, basil, garlic, salt and pepper in a small bowl. Coat zucchini pieces with olive oil and then sprinkle with parmesan mixture. Place onto baking sheet and bake until tender, about 15 minutes. Then broil for 2-3 minutes, until golden brown. Remove from oven, garnish with parsley (if desired) and serve.
