Winter Veggies and Chicken Sheet Pan Dinner

This One Pan Chicken and Veggies Dinner is a simple baked chicken recipe with roasted butternut squash. A delicious roasted chicken thighs recipe with garlic, thyme, and paprika that goes with the delicious winter veggies!

Ingredients

  • 1 medium butternut squash cut into 1 in cubes
  • 1 bunch of kale chopped can omit or sub with broccoli
  • 1 small red onion sliced
  • 8 chicken thighs can sub with drumsticks
  • 10 cloves garlic minced
  • 1 tbsp apple cider vinegar
  • 3 Tbsp olive oil
  • 3/4 Tbsp kosher salt
  • 1 tsp ground black pepper
  • 1 tsp paprika
  • 1/2 tsp tumeric optional
  • 2-3 twigs fresh thyme optional
  • 1/4 cup finely chopped parsley for garnish optional

Instructions

  1. Preheat oven to 375°F with the baking rack in the middle. Line a baking sheet with parchment paper. You can also use a greased glass baking dish.

  2. Combine all ingredients in a bowl or in the prepared baking pan.
  3. Toss everything together until all ingredients are coated evenly.
  4. Distribute everything onto the pan or baking dish. Bake in a preheated to 375°F oven for 45 minutes. Increase heat to 425 and bake for another 10 minutes until the chicken is golden in color. You may need to remove the chicken early if it has reached an internal temp of 165 before the squash is baked through.

Recipe Notes

This is great with any veggies you want to add in. I love adding broccoli, but I'm the only one in the house that likes broccoli so I cook cook it separately.

You can sub thighs for drumsticks. Both are equally delicious but remove the drumsticks 5-10 minutes early to avoid over cooking them.

I love adding fresh sage to this dish as well.
