Nourishing Chicken Soup

Boost your mood and your health with this souper soup!

Ingredients

  • 2 tbsp olive oil
  • 1 cup uncooked lentils, drained and rinsed
  • 6 cups chicken stock or broth
  • 1 onion diced
  • 4 celery stalks diced
  • 3 carrots coined (no need to peel)
  • 3 small sweet potatoes (peel if preferred)
  • 5 cloves of garlic (minced)
  • 3 tsp curry powder
  • 2 tsp cumin
  • 1/2 tsp coriander
  • 1/2 tsp thyme
  • 1 14 oz can fire roasted tomatoes (do not drain) optional
  • 2 tsp salt or more to taste
  • 1/2 tsp pepper or more to taste
  • 1 lemon juiced about 2 tbsp (optional)
  • grated mozzerella cheese and bread for serving optional
  • 2 cups shredded cooked chicken Optional

Instructions

  1. Add everything except for the lemon juice and cheese to a large pot and bring to a boil.

  2. Boil for about 3 minutes

  3. Reduce Heat to low and allow it to simmer with a lid slightly ajar for a bout 25-30 minutes. When the carrots are tender, it's ready!

  4. Add the lemon juice at the end for a great zing and serve with toasted bread. If you have some cooked chicken to add in, add it now and enjoy a hearty and cozy meal!

Recipe Notes

Anything and everything you want to omit or add to this soup will make it delicious! I love tomatoes, but I didn't have a can and made it without. It was still great, but better with the tomatoes. If there are certain seasonings you want to swap out, try it! You can also make this vegetarian with vegetable broth and omit the shredded chicken.
