Squash, Sausage, and Kale Quiche

My go to Quiche recipe! It's super simple and you can really add or subtract anything to make this however you like. The eggs are the real star and this is such a tasty meal any time of the day!

Ingredients

  • 2 cups Butternut Squash very thinly sliced or cubed
  • 12 Eggs
  • 1 tsp Garlic Powder
  • Sea Salt & Black Pepper to taste
  • 1 Red Bell Pepper large, diced
  • 1/2 Red Onion diced
  • 2 cups Kale Leaves (stems removed and chopped)
  • 12 oz Pork Sausage diced or Ground Pork

Instructions

  1. Preheat the oven to 400°F (205°C). Line a greased casserole dish with the butternut squash pieces so the entire bottom and sides are covered, acting as a crust. If you use cubed squash you just won't get the crust look, but it will still taste delicious! I use cubed most often because it's easier.

  2. In a large bowl, whisk the eggs with the garlic powder, salt, and pepper. Add the pepper, onion, kale, and sausage to the greased dish. Pour the egg mixture over the veggies and sausage. You can mix a little if you want to, but it's not necessary.

  3. Bake for 45 minutes, or until the egg has risen and is starting to brown on top. If adding cheese on top, pull the casserole out about 5 minutes before it's done and add it on top to melt.

  4. Remove from the oven, slice, and serve immediately. Enjoy!

Recipe Notes

Use any veggies that you have! Quiche is really fun and and very easy to add extra veggies and meat into for more flavor and nutrition.

Leftovers: Refrigerate in an airtight container for up to three days. Freeze for up to three
months.

Additional Seasonings:
Add onion powder and smoked paprika. Really just add your own favorite seasonings.
Top with Grated cheese or goat cheese
