  • 1 ea Whole BWF Chicken (~4lb)
  • 1 stick Grass Fed Butter
  • 1 onion (white or yellow)
  • salt, pepper, garlic powder to taste


  1. Preheat oven to 350 degrees

    Place chicken in a roasting pan, and season generously inside and out with salt and pepper. Sprinkle inside and out with garlic powder. Place 3 pats of butter in the chicken cavity. Slide remaining pats of butter between skin and breast meat. Cut the onion in half and place half inside the chicken cavity.

    Bake covered 1 hour in the preheated oven. Remove cover and turn oven temp to 450 degrees. Let roast 15-30 minutes under high temp or until skin is brown and crisp and internal chicken temp is 160 degrees.  Remove from heat, and baste with melted butter and drippings. Cover with aluminum foil, and allow to rest about 15 minutes before serving
