Delicious Pumpkin Soup
This super tasty soup is sure to raise your spirits and put you in a festive fall mood! I highly recommend making your own stock or broth with a whole chicken following this super simple chicken stock recipe or bone broth recipe! We also sell bone both if you want to skip that step and still get a super flavorful and nutrient dense soup.
If you're short on time, make this in the slow cooker! Super easy, no fuss, and you come gome to greatness after a long day!
Pair this with some fresh bread and a salad to make a complete fall fireside meal!
Ingredients
- 1/4 cup butter coconut oil, olive oil, or lard
- 3 large yellow onions sliced 1/4” thick
- 2 cloves minced garlic
- 2 tablespoons fresh sage finely chopped
- 1/2 teaspoon thyme
- 1/2 teaspoon nutmeg or allspice
- 3 cups roasted pumpkin flesh about 2 sugar pie pumpkins or 30 oz of pumpkin puree
- 6 cups chicken stock or bone broth
- 1 cup cream heavy, coconut, or cashew
- Salt and pepper to taste

- crumbled bacon
- Freshly ground black pepper
- lime juice it's surprisingly great!
Instructions

Heat fat in a heavy-bottomed pot over medium heat.

Add onions with a big pinch of salt. Stir to combine.

Cover and cook for 3-5 min.

Remove lid and stir. With the lid off, continue to stir every 5 min. Turn heat to low if needed.

Cook 20-30 minutes until onions turn golden brown and become very sweet.

Add garlic, sage, and nutmeg. Cook for 2 min.

Add broth and pumpkin and bring to a boil.

Once boiling, turn heat to low, cover, and simmer for 20 min.

Transfer the soup to a blender and purée. Alternatively, use an immersion/stick blender to purée right in the pot.

Stir in cream and season with salt to taste.

Simmer the soup for 3-5 minutes until warmed through
Recipe Notes
The soup is delicious on it's own, but some bacon crumbles on top really makes it ultimate comfort food! If you like spice, add a little cayenne to garnish.
If you want to go the slow cooker method (my favorite way of cooking) add all ingredients to the slow cooker and mix together. Set for 4 hours on high or 8 hours on low. When finished, use an immersion blender to really blend and smooth everything. Easy and delicious!
