So you have been waiting patiently for BeeWench Farm bacon and find out that it’s fresh pork belly and not the usual bacon you are used to getting from us or the store. We were a bit on the fence at first too, but after some trial and error, we are happy to report that this fresh pork belly bacon is amazing and very versatile!

Depending on how you like your bacon, this fresh bacon gives you creative freedom to do just about anything and incorporate it in any kind of dish! If you are on a low sodium or no salt diet, you can skip the salt and still get very tasty bacon from seasoning and smoking!

If you prefer sweet bacon to go with your breakfast, try seasoning it with a little cinnamon, salt, and brown sugar. My favorite way to cook up the sweet bacon for breakfast is by mixing my ingredients in a bowl, scrunching the bacon in everything to get it well coated, and laying the pieces on a cooling rack. I bake it on a baking sheet so that the grease can drip off and not make a mess in the oven. You can also line the baking sheet with aluminum foil to have a super easy clean-up! Bake at 375 until it is your desired doneness. I like mine a little crispy, so that usually takes about 20 minutes.

If you are trying to limit sugar (good idea since it’s in practically everything else!), try using a little salt, cinnamon, and maple syrup or honey. If you go with maple syrup, fry it up in the pan with it while you are cooking. The maple syrup method doesn’t work well in the oven since it tends to drip off with grease. If you want to try honey, cook the bacon with salt however you like and once it’s done drizzle the honey on top or dip the bacon in some honey while you eat. I never recommend heating your honey at high temps because heating it deteriorates the quality and loses its essential enzymes and nutrients. If you buy local raw honey for it’s health benefits, you certainly do not want to lose those!

If you want to incorporate bacon into a savory recipe, go with whatever you think compliments the dish. DJ cooked some up for breakfast with some garlic powder, onion salt, and a little black pepper. It was delicious! I personally am not great with heat, but a great local chef advised trying some paprika to give it a little kick.

If you have a smoker and love smoked bacon, flavor with seasonings and stick that bacon in the smoker! I would advise cooking it in there with some aluminum foil underneath to catch the grease. This is excellent if you are making some burgers and you can smoke them together. You can also smoke it and save it for later dishes.

Honestly, you cannot go wrong with this because the pork is excellent and tastes great even if you just salt it a little. I am a little biased towards our meat, but it really is the best pork I have ever eaten and I am so happy to be able to provide our family and community with a high quality product that I feel improves our health rather than deteriorating it!
