It already feels like fall! There is a crispness to the air as we wind down this summer share season at BeeWench Farm. I hope you’ve enjoyed your summer baskets as much as I’ve enjoyed this year’s harvest.

The Recipe – Lemon Cucumber Couscous
3 cups cooked couscous
Juice of one large or two small lemons
3/4 cup chopped lemon cucumber
1/2 cup finely diced red onion
1 clove minced onion
salt and pepper to season
1/4 cup extra virgin olive oil
Chill for 1 hour before serving
